History of the dish
When the colonizers arrived on the new continent, they were amazed to learn about the countless foods prepared by the tribes.
And in response, they decided to keep a record of each one, in the form of journals, to prevent them from being lost and to make the most of them. And just in case you were wondering, yes. All these documents are now carefully guarded due to their high historical value.
Among these archives, there is a dish described by the writer as a kind of "starch bread," which would be a primitive version of the chipa; because the dish we now know by that name is the result of the evolution of that starch bread, when cheese was added.
And it became so popular that it has been prepared for generations, becoming one of the flagship dishes of Paraguayan cuisine.
Curious facts
Also called "chipá," it is one of the few dishes honored with an annual celebration; which has been held every August 9th since 2015 in Paraguay. Not bad for a dish with simple ingredients, right?
And while its preparation methods have few variations, there have been some evolutionary changes. In addition to its basic ingredients, sometimes eggs, milk, wheat flour, orange juice, and corn flour have been added.
