Ingredients
250 grams of Chicken breast cut into cubes
4 Slices of bread
½ cup of White wine
50 grams of Chopped nuts
1 Avocado
1 teaspoon of Thyme
1 teaspoon of Turmeric
1 tablespoon of Chopped parsley
1 Garlic clove
20 milliliters of Olive oil
20 milliliters of Sunflower oil
1 teaspoon of Lemon juice
1 teaspoon of Lemon zest
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Place the bread slices on the grill, previously brushed with a bit of oil.
Step 2 : In a pan, heat a little oil and sauté the chicken along with thyme, turmeric, salt, and pepper.
Step 3 : After a few minutes, add the white wine and let the alcohol evaporate.
Step 4 : In a small bowl, mash the avocado with a drizzle of olive oil, salt, and lemon juice.
Step 5 : In another bowl, prepare the gremolata with nuts, parsley, lemon zest, chopped garlic, and a little olive oil; mix everything and set aside.
Step 6 : On a plate, place the toasted bread slices, spread with avocado cream, add the sautéed chicken, and top with the gremolata.
