Ingredients

2 ½ kilograms of Leavening flour

1 teaspoon of Salt

¼ cup of Sunflower oil

1 cup of Boiling water

Chopped oregano

400 grams of Corn

1 Onion

1 Bell pepper

3 Garlic cloves

½ A bunch of parsley

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In preparing the dough, start by placing the flour with salt in a bowl.

Step 2 : Next, make a mixture of oil and boiling water in a cup.

Step 3 : Then, make a hole in the center of the flour and add the oil and water mixture.

Step 4 : Mix well with a spoon and knead until a homogeneous dough is obtained, incorporating finely chopped fresh oregano leaves during kneading.

Step 5 : Let the dough rest while preparing the filling.

Step 6 : To prepare the filling, remove the kernels from the fresh corn and boil them with water and salt until soft.

Step 7 : Meanwhile, chop the onion, bell pepper, and garlic into very small pieces.

Step 8 : In a skillet with hot oil over low heat, sauté the onion and garlic, then add the bell pepper and incorporate the cooked corn.

Step 9 : Add finely chopped parsley and season with salt and pepper to taste.

Step 10 : To assemble the empanadas, make small dough balls, roll each out with a rolling pin into a round shape.

Step 11 : Place the filling in the center of each disc, close to form the empanadas, and place them on a baking sheet previously greased with a little oil and dusted with flour.

Step 12 : Finally, bake in the oven, and after about 25 minutes, turn the empanadas to ensure they brown evenly.
