Egg, Onion, and Cheese Empanadas

Ingredients

2 ½ cups of Flour

500 grams of Finely chopped onion

4 Chopped hard-boiled eggs

200 grams of Paraguayan cheese

100 grams of Lard

1 teaspoon of Baking powder

1 tablespoon of Chopped parsley

1 cup of Water

Olive oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a skillet, add a little oil and cook the onion until transparent.

Step 2 : Remove from heat and let cool.

Step 3 : In a bowl, combine the flour with baking powder and a teaspoon of salt.

Step 4 : Add the lard and gradually incorporate the water.

Step 5 : Knead all the ingredients until a manageable dough forms, then let it rest covered in the refrigerator for about 30 minutes.

Step 6 : In another bowl, mix the pre-cooked onion, eggs, parsley, and cheese.

Step 7 : Adjust the salt and pepper to personal taste.

Step 8 : Once rested, roll out the dough on a floured surface and cut out empanadas with a cutter.

Step 9 : Place the filling in each empanada and seal them, creating a decorative edge (repulgue).

Step 10 : Arrange the empanadas on a tray and brush them with a mixture of egg yolk and water.

Step 11 : Finally, bake the empanadas at 180°C (356°F) for 20 minutes.
