Traditional Pastel Mandi'o
Ingredients
1 kilogram of yuca
25 grams of melted butter
250 grams of corn flour (100 grams for the work surface)
60 grams of wheat flour
1 egg
Salt
Vegetable oil as needed
1 kilogram of beef
30 grams of rice
2 onions
½ small bell pepper, chopped
4 garlic cloves
½ teaspoon of cumin
1 bay leaf
3 sprigs of chopped parsley
2 hard-boiled eggs, chopped

Preparation
Step 1 : To prepare this delicious recipe, first place the beef in a pressure cooker along with garlic, onion, bay leaf, salt, and pepper.
Step 2 : Cook for 45 minutes until the meat is tender.
Step 3 : Then, cut the meat into pieces and brown them in a skillet with garlic, onion, bell pepper, and rice.
Step 4 : Season with salt and pepper to taste, and add beef broth, parsley, and cumin.
Step 5 : Cook for a few minutes.
Step 6 : Next, add the beef and eggs to the mixture.
Step 7 : Meanwhile, wash and peel the yuca, cook it, mash it, and mix with corn flour, butter, salt, egg, and wheat flour.
Step 8 : Roll out this dough and cut circles to then fill with the meat mixture.
Step 9 : Seal the circles forming empanadas and fry them until golden and crispy.
