Yuca Cake
Ingredients
1 kilogram of Cassava
1 Egg
1 tablespoon of Fat
1 ¼ cup of Corn flour
½ cup of Flour
500 grams of Beef meat
1 Onion
1 Bell pepper
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a skillet, cook the chopped meat in small cubes along with the onion.
Step 2 : Then add the cubed bell pepper and chopped boiled egg.
Step 3 : Season with salt and pepper to taste.
Step 4 : For the dough, boil the cassava in salted water.
Step 5 : Once soft, remove from heat and make a purée, either by mashing with a machine, passing through a mill, or using a mortar.
Step 6 : Add the fat to the purée, the egg, a pinch of salt, and the regular flour.
Step 7 : Knead well and form small balls the size of a cookie.
Step 8 : Sprinkle corn flour on the work surface and roll out the dough with a rolling pin, dusting both the dough and the surface with corn flour.
Step 9 : Form circles approximately 10 centimeters in diameter.
Step 10 : Fill molds with the chopped meat filling, moisten the edges with water, and close with a fork.
Step 11 : Finally, fry in very hot oil.
