Carrulim is a traditional Paraguayan beverage consumed every August 1st to cleanse the body and attract good luck. It combines sugarcane, rue, and lemon with symbolic and medicinal properties.

Ingredients

250 milliliters of Sugarcane

1 Handful of rue leaves

2 Lemons squeezed

1 Lemon slices

1 tablespoon of Sugar

Water

Preparation

Step 1 : The rue leaves are carefully washed and left to air dry for a few minutes.

Step 2 : Then, 250 ml of sugarcane juice are poured into a glass bottle, and the rue leaves are added.

Step 3 : The lemon juice is squeezed over the mixture and gently shaken to blend the flavors.

Step 4 : Lemon slices are added to the bottle to enhance the citrus flavor.

Step 5 : If desired, a tablespoon of sugar can be added to mellow the drink.

Step 6 : The mixture is left to rest for a few hours in a cool, dark place to allow the ingredients to meld properly.

Step 7 : Finally, the Carrulim is served in small glasses, adding a bit of water if a lighter version is preferred.
