Ingredients

1 cup of Butter beans

1 Small onion

1 Bell pepper

½ tablespoon of Olive oil

1 Carrot

½ Squash

1 pinch of Salt

Cheese

1 pinch of Pepper

Preparation

Step 1 : To prepare this recipe, first soak the beans in water overnight.

Step 2 : Then, peel and chop the onion, and dice the bell pepper.

Step 3 : Next, boil the carrot and squash.

Step 4 : In a pot with hot oil, sauté the chopped vegetables and cook for about 5 minutes over medium-high heat.

Step 5 : Then, tilt the pot to discard some of the fat.

Step 6 : Meanwhile, cook the pre-soaked beans in water for approximately 30 minutes (cooking time may vary depending on the type of beans).

Step 7 : Next, add the cooked beans along with their cooking water to the pot with the vegetables.

Step 8 : Add salt and pepper to taste, reduce the heat, and cook everything for 90 minutes.
