To prepare the Cassava Pie, cook the beef with onion, garlic, and bay leaf, seasoning with salt and pepper.
After cooked, cut into medium-sized pieces.
The rice is sautéed with garlic, onion, and locoto, then the reserved broth is added, along with parsley and cumin, cooking for 10 minutes.
Add the cooked meat and mix well.
The cassava is washed, peeled, and cooked until it forms a puree with flour.
Form circles with the dough, fill them, and fry in hot oil.
Cassava Pie
Ingredients
1 kilogram of Cassava
2 tablespoons of Melted fat
250 grams of Corn flour
100 grams of Wheat flour
1 Egg
1 pinch of Salt
Oil
1 kilogram of Beef
50 grams of Rice
2 Onions
½ Chopped locoto
4 Garlic cloves
½ teaspoon of Cumin
1 Bay leaf
Chopped parsley
2 Chopped hard-boiled eggs
1 pinch of Pepper
Preparation
Step 1 : To prepare the recipe, start by cooking the beef in a pot along with the onion, garlic, and bay leaf, seasoning with salt and pepper.
Step 2 : Once cooked, remove the beef and set aside the broth.
Step 3 : Then, cut the beef into medium-sized pieces.
Step 4 : In the same pot, sauté the garlic, onion, and locoto, then add the previously salted and peppered rice.
Step 5 : Add the reserved broth, parsley, and cumin, cooking for another 10 minutes.
Step 6 : Add the cooked beef and continue mixing.
Step 7 : Next, place the filling in a strainer and add the chopped hard-boiled eggs.
Step 8 : Then wash the cassava, peel it, cut into large pieces, and cook in salted water for half an hour.
Step 9 : Make a puree from the cassava, place it in a container, and add the corn and wheat flours to form the dough.
Step 10 : Once the dough is about 2 cm high, form 10 cm diameter circles.
Step 11 : Place the filling in the center of each circle, moisten the edges, and close the empanadas.
Step 12 : Finally, fry in hot oil until golden and let drain on paper towels before serving.
