Homemade Payaguá Mascada
Ingredients
500 grams of ground meat
1 kilogram of yucca (cassava)
2 cloves of garlic, chopped or minced
1 onion, diced
2 green onions, chopped
½ teaspoon of cumin
1 tablespoon of pepper (or to taste)
1 bay leaf (optional)
Chopped parsley to taste
Salt to taste
Vegetable oil or lard
Flour
Preparation
Step 1 : In a pot, add oil and sauté the onion and garlic until fragrant.
Step 2 : Add the meat and season with pepper, cumin, green onions, and parsley, cooking until done. Reserve.
Step 3 : Peel and boil the yucca with salt and bay leaf until tender.
Step 4 : Make a mash and mix it with the cooked meat.
Step 5 : Form flattened balls with a little flour.
Step 6 : Next, fry the payaguás in hot oil until golden.
Step 7 : Drain and serve hot.
