Locro Criollo
Ingredients
250 grams of White corn
150 grams of White beans
200 grams of Beef shoulder
250 grams of Pork shoulder
200 grams of Smoked bacon
350 grams of Pumpkin
150 grams of Sweet potato
3 Red sausages
2 liters of Water
1 White onion
1 Diced bell pepper
Spicy ground chili
1 Tablespoon
Sweet paprika
1 Tablespoon
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The white corn and beans are washed thoroughly and soaked overnight.
Step 2 : The next day, bring the soaked corn with its water to a boil.
Step 3 : Add the beans and cook over low heat for 1 hour without salt.
Step 4 : After this time, add chopped meats and bacon, and cook for another 30 minutes.
Step 5 : Then, add the pumpkin and sweet potato, adjust the salt, and cook for approximately 30 more minutes.
Step 6 : Add the sliced sausages and cook until everything is tender, adding more water if necessary.
Step 7 : To prepare the spicy sauce, sauté the onion with a bit of oil, add the bell pepper, paprika, ground chili, and a pinch of salt.
Step 8 : Add a little water if needed and set aside.
Step 9 : Finally, serve the locro in bowls and add a teaspoon of the spicy sauce to each.
Step 10 : Alternatively, you can mix the prepared sauce into the locro pot before serving.
