Salt Cod with Chickpeas
Ingredients
500 grams of Chickpeas
500 grams of Salt cod
1 Onion, diced
½ Red bell pepper, diced
½ Green bell pepper, diced
1 Leek, diced
1 teaspoon of Sweet paprika
2 tablespoons of Fried tomato sauce
Oil for sofrito
Flour for breading
Preparation
Step 1 : One day before, place the chickpeas in soaking water with salt and baking soda to soften them.
Step 2 : At the same time, soak the salt cod in cold water to desalinate, keeping it in the refrigerator.
Step 3 : When the chickpeas are tender, remove from heat and add the paprika, making sure to keep it off the heat to prevent burning.
Step 4 : Mix in the fried tomato sauce well and cook for a few more minutes.
Step 5 : Transfer the previously soaked and drained chickpeas to the pressure cooker, add the sofrito on top, ensuring they are covered with fish broth, about one finger high over the chickpeas.
Step 6 : Cook for 12 minutes once the second orange ring has risen.
Step 7 : Meanwhile, bread the cod with flour and fry in a skillet with oil, taking care not to overcook it, as it will finish cooking along with the chickpeas.
Step 8 : Moderation with salt is essential, as the desalinated cod will enhance the flavor of the stew.
Step 9 : Taste and adjust the seasoning at the end if needed.
Step 10 : Once fried, place the cod over the chickpeas and let everything simmer together for a few minutes.
Step 11 : Gently shake the pot to allow the cod to release its gelatin.
