Stewed Rolled Beef
Ingredients
1 kilogram of Loin
400 grams of Bacon
4 Medium ripe tomatoes
2 Onions
2 Garlic cloves
1 Bunch of parsley
Olive oil
1 pinch of Salt
1 pinch of Pepper
Oregano
Preparation
Step 1 : To prepare this recipe, start by cutting the loin into pieces as if making steaks.
Step 2 : Then, cut the bacon into pieces and place it in a bowl along with the onions, one tomato, parsley, oregano, salt, pepper, and garlic.
Step 3 : Add a little vinegar and mix everything well.
Step 4 : Stuff the steaks with this filling and roll them up, securing and tying the ends to prevent the filling from escaping.
Step 5 : Let the steaks marinate overnight in the refrigerator.
Step 6 : The next day, heat a little oil in a pot and sear the tied steaks.
Step 7 : Add the remaining tomatoes, a bit of boiling water, and cook over low heat for about 40 minutes.
Step 8 : Add more oregano, salt, and pepper to taste.
Step 9 : Cook until the meat is tender and ensure there is enough sauce.
Step 10 : Once ready, serve the steaks accompanied by rice, salad, and chipa guazú.
