Tapioca Starch Mbejú
Ingredients
500 grams of Cassava starch flour
300 grams of Grated Paraguayan cheese
1 teaspoon of Salt
200 grams of Unsalted melted butter
150 milliliters of Milk
100 milliliters of Water
2 teaspoons of Anise
Preparation
Step 1 : To prepare the tapioca starch mbejú, start by mixing the milk with the water and set this mixture aside.
Step 2 : In a large bowl, place the cassava starch flour and the teaspoon of salt, mix well, and create a well in the center.
Step 3 : Then, pour 100 grams of melted butter and half of the milk and water mixture into the well.
Step 4 : Incorporate everything and begin kneading.
Step 5 : Gradually add the rest of the milk and water mixture as needed, continuing to knead.
Step 6 : When the dough becomes slightly lumpy, add the grated cheese and continue kneading until the dough reaches a sandy consistency.
Step 7 : To cook the tapioca starch mbejú, heat a skillet with some butter.
Step 8 : Pour a little of the mixture, flatten it, and cook on both sides.
Step 9 : Repeat this process until all the dough is used up.
