Ingredients

3 kilograms of Pork with fat

2 tablespoons of Coarse salt

½ liter of Wine vinegar

1 teaspoon of Ground pepper

1 Garlic head

5 Meters of clean casings

Preparation

Step 1 : To prepare this recipe, first grind the pork and then place it in a large plastic or enameled container.

Step 2 : Next, mix the meat with the other ingredients and leave it in the refrigerator until the next day.

Step 3 : Then, load this mixture into the casings and secure them by tying every 5 or 10 cm with a string, leaving the load loose.

Step 4 : Next, slowly submerge the preparation into plenty of hot water and prick with an orange thorn to release excess liquid when blisters form.

Step 5 : Remove the casings and hang them to dry.

Step 6 : Finally, it is worth mentioning that it can be seasoned with spicy peppers to taste.
