Dulce de mamón
Ingredients

1 kilogram of Green papaya
1 kilogram of Sugar
Vanilla essence
1 Small package of baking soda
1 teaspoon of Clove
Water
Preparation
Step 1 : The fruit is peeled and cut into wedges, then washed carefully.
Step 2 : Next, the wedges are placed in a pot with water and boiled for 5 minutes.
Step 3 : In a bowl, the wedges are combined with water and baking soda, left to soak for about 3 hours, then thoroughly rinsed.
Step 4 : In a saucepan, the wedges are arranged and covered with water up to halfway.
Step 5 : Sugar, vanilla, and cloves are added.
Step 6 : The saucepan is placed over low heat for about two hours, making sure not to move the fruit too much to prevent it from breaking apart.
Step 7 : If the liquid evaporates, add a little more water.
Step 8 : Once ready, remove from heat and let cool.
