Guava Paste Candy
Ingredients
5 kilograms of Guavas
3 kilograms of Sugar
2 liters of Water
Preparation
Step 1 : The guavas are washed several times, their stems and tips are removed with a knife, and then they are cut in half.
Step 2 : Next, they are weighed and placed in a saucepan with water.
Step 3 : The pot is covered and the guavas are boiled for 1 hour and a half, or until they are soft.
Step 4 : Once ready, they are removed from the heat and passed through a sieve or colander while still hot.
Step 5 : In a copper pot or saucepan, the guava pulp is mixed with sugar and cooked over heat, stirring constantly until reaching the right point (approximately 2 and a half hours).
Step 6 : Then, the mixture is poured into a mold lined with parchment paper and allowed to cool until it sets.
Step 7 : It is recommended to consume it cold.
Step 8 : It is important to note that the amount of sugar can vary depending on the quality and ripeness of the guava.
Step 9 : It is suggested to use between 600 and 700 grams of sugar per kilogram of raw guava.
Step 10 : To speed up the process, the cooked fruit can be blended and then passed through a wire sieve.
