5 liters of Cow's milk
1 Rennet
Lemon
1 pinch of Salt
Preparation
Step 1 : To prepare the Paraguay cheese, first wash and soak the rennet with lemon, then let it rest in a cool place for 4 hours.
Step 2 : Next, proceed to dry the rennet in the sun for a couple of days.
Step 3 : Then, prepare the curd with raw milk and rennet, stirring constantly for approximately 1 hour.
Step 4 : Once the curd is ready, let it rest until all the milk curdles.
Step 5 : Then, break the curd and place it in cheesecloths, letting them rest until they release whey.
Step 6 : These cheesecloths should be located in a well-ventilated area, but out of direct sunlight.
Step 7 : The next day, the Paraguay cheese will be ready to enjoy.
