The Paraguayan Mbejú is a delicious traditional recipe, similar to a pancake but with a unique flavor. Prepared with corn flour, starch, cheese, and fat, cooked slowly until golden.
In the traditional version of Mbejú, the mixture of corn flour, starch, salt, and fat is combined with Paraguayan cheese in pieces, forming a grainy texture.
When heated in a pan with oil, it is carefully pressed until golden on both sides, creating a crispy exterior and a soft interior.
Traditional Mbejú
Ingredients
250 grams of Corn flour
500 grams of Starch
200 grams of Pork fat
2 tablespoons of Salt
500 grams of Paraguayan cheese
Preparation
Step 1 : To begin, place the corn flour, starch, salt, and fat in a bowl.
Step 2 : Mix well until achieving a granular consistency.
Step 3 : Then, add the Paraguayan cheese in pieces and proceed to place the mixture between the palms of your hands, rubbing them against each other until the preparation is fully integrated and grainy.
Step 4 : Next, heat a pan with a little oil and pour enough of the mixture to cover the bottom of the pan, approximately 2 cm thick.
Step 5 : As the mixture warms, use the back of a spoon to press down the preparation.
Step 6 : Once it is golden underneath, flip the Mbejú and press it again with the back of the spoon.
