Homemade Surubí Broth
Ingredients
1 kilogram of surubí
1 onion
2 tomatoes
1 small green bell pepper
1 carrot
2 potatoes
3 garlic cloves
½ cup of cooked peas
1 tablespoon of oregano
½ liter of milk
1 tablespoon of cream
2 vegetable broth cubes (optional)
Chopped parsley
Oil as needed
Paraguayan cheese to taste
Salt and pepper to taste
Preparation
Step 1 : The fish should be thoroughly cleaned and cut into medium pieces, then seasoned with salt and pepper and set aside.
Step 2 : In a large pot with hot water, add the vegetable broth cubes and cook until dissolved.
Step 3 : In another pot with hot oil, sauté the onion, tomatoes, bell pepper, and garlic, then add the chopped potatoes and carrots with a pinch of salt and cook for 5 minutes.
Step 4 : Then, add the fish and broth, cooking over medium heat for 10 minutes.
Step 5 : Add the milk, chopped parsley, oregano, and cook for an additional 5 minutes.
Step 6 : Finally, add the cream, cheese, and cooked peas, adjust the seasoning, and serve the broth in a soup cup with all the ingredients.
Step 7 : Sprinkle with parsley to taste before serving.
