Jopara, a Paraguayan classic, combines grains like locro and beans with vegetables, resulting in a nutritious and flavorful broth. A comforting dish that highlights the richness of traditional Paraguayan cuisine.
To prepare Jopara, black beans, rice, and meat were combined in a large pot with vegetable broth until tender.
Then, onions, peppers, and tomatoes were cooked in a pan with olive oil until golden.
Finally, both preparations were mixed and simmered until the flavors fused and the dish was ready to be enjoyed with family.

Ingredients
200 grams of Locro or white corn
200 grams of Beans
2 White onions
200 grams of Carrot
200 grams of Pumpkin
4 Tomatoes
250 milliliters of Milk
300 grams of Paraguayan cheese
2 Bunches of green onions
1 Vegetable broth cube
2 tablespoons of Oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The beans and locro were soaked for 12 hours.
Step 2 : Then, in a saucepan with enough water, the grains were cooked with the vegetable broth until tender.
Step 3 : In a pan, a little oil was heated and the onions with the tomato were sautéed.
Step 4 : Next, the carrots, pumpkin, salt, pepper, and cumin were added, stirring all the ingredients to blend the flavors.
Step 5 : The sofrito was incorporated into the saucepan with the locro and beans broth, adding the milk, chopped green onions, and adjusting the salt to taste.
Step 6 : It was cooked for about 10 minutes until everything was well done.
