Jopara (pronounced yopara) is a Guarani term that means mixture or combination and also refers to one of the typical dishes of Paraguayan cuisine, which is traditionally prepared on October 1st as part of a celebration.
Jopara Paraguayo
Ingredients
200 g of white corn (locro)
200 g of red beans (kidney beans)
300 g of beef (preferably for stewing)
1 medium onion, chopped
2 garlic cloves, chopped
1 carrot, sliced
1 red bell pepper, diced
2 tomatoes, chopped
1 medium potato, diced
1 liter of beef broth or water
2 tablespoons of vegetable oil
Salt and pepper to taste
1 teaspoon of cumin
1 bay leaf
Fresh parsley for garnish
Preparation
Step 1 : The corn and beans are soaked the night before to soften them.
Step 2 : Then, they are cooked in a pot with water and salt for about 40 minutes until tender, then drained and set aside.
Step 3 : In a large skillet, heat the oil and sauté the onion, garlic, carrot, and bell pepper for 5 minutes.
Step 4 : Add the chopped beef and brown it on all sides.
Step 5 : Add to the pot with the corn and beans the chopped tomato, potato, cumin, bay leaf, and the beef and vegetable stew.
Step 6 : Cover with beef broth and bring to a boil.
Step 7 : Simmer on low heat for about 1 hour until the meat is tender and flavors meld.
Step 8 : Taste and adjust salt and pepper as needed, remove the bay leaf, and serve the hot Jopara garnished with fresh parsley.
