Ingredients
500 grams of Beef ribs
200 grams of Locro
1 Large onion
1 Bell pepper
1 Carrot
1 Tomato
1 tablespoon of Oregano
½ tablespoon of Cumin
Vegetable broth
2 tablespoons of Chopped parsley
Lemon
Olive oil
Preparation
Step 1 : In a large pot, sear the pieces of meat with a bit of oil.
Step 2 : Then, add chopped onions, bell peppers, and tomatoes.
Step 3 : Season with salt, pepper, oregano, and a touch of cumin.
Step 4 : Sauté all ingredients so the flavors meld.
Step 5 : After this, add the locro and incorporate the vegetable broth.
Step 6 : Let it cook for about 2 hours over low heat so the meat and locro soften, adding more broth as needed to maintain the desired consistency, which should be thick but with enough broth.
Step 7 : Once cooked, add chopped parsley and adjust seasoning as needed.
