Meatball or So'oapu'a Soup

In a saucepan, sauté onion, bell pepper, and tomatoes until they soften.

Add the broth and rice, cooking covered over low heat.

In a separate bowl, mix ground meat, garlic, egg, corn flour, salt, oregano, and pepper to form the meatballs.

Once ready, add the meatballs to the broth and cook for about 10 minutes.

When serving, adjust the salt and pepper to taste, and garnish with chopped green onions.

Ingredients

350 grams of Ground beef

1 Onion

2 Tomatoes

1 Bell pepper

¼ cup of Corn flour

1 Garlic clove

1 Egg

1 liter of Vegetable broth

2 tablespoons of Rice

2 tablespoons of Oil

2 Green onions

Oregano

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a saucepan, add a little oil and sauté the chopped onion.

Step 2 : Then, add the bell pepper and tomatoes, stirring until they soften.

Step 3 : Proceed to add the broth along with the rice and let it cook covered over low heat.

Step 4 : In a separate bowl, mix the meat with chopped garlic, egg, corn flour, salt, oregano, and pepper until obtaining a firm dough.

Step 5 : Form the meatballs and set aside.

Step 6 : Add the meatballs to the broth and cook for approximately 10 minutes, until both the rice and meat are cooked.

Step 7 : Adjust the salt and pepper as needed and serve garnished with chopped green onions.
