Ingredients

3 Onions

30 grams of Butter

20 grams of Flour

50 milliliters of Port wine

150 grams of Paraguayan cheese

1 Clove

1 liter of Chicken and vegetable broth

4 Slices of toasted bread

1 Green onion

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot, melt the butter and add the chopped onions in thin slices.

Step 2 : Add a pinch of salt and a clove, and sauté until caramelized.

Step 3 : Once the onions are soft, add the flour while stirring continuously.

Step 4 : Then gradually incorporate the port wine, followed by the broth, and let it boil for about 10 minutes.

Step 5 : Next, add a pinch of nutmeg and pepper to taste, cooking for another 5 minutes before removing from the heat.

Step 6 : In a clay vessel, place a slice of toasted bread topped with shredded cheese.

Step 7 : Then, add a portion of the onion broth and another slice of toasted bread with cheese on top.

Step 8 : Place in a preheated oven at 200°C until gratined.

Step 9 : When serving, decorate with chopped green onions.
