Pira caldo, known as mandi'i broth in Paraguay, is a traditional soup with catfish, vegetables, and fresh Paraguayan cheese. Its preparation includes sautéing onion, adding tomato, bell peppers, chiles, leeks, celery, fish, water, milk, cheese, cilantro, salt, and pepper. A comforting delight.
In a pot, add a little oil and sauté the onions until they are transparent.
Then, add the chopped tomatoes, bell peppers, chiles, leeks, and celery stalks.
Cook covered over low heat until the vegetables soften, about 7 minutes.
Next, incorporate the fish, water, and a little salt, and cook covered for about ten minutes over medium heat.
Afterward, add the milk, crumbled cheese, cilantro, and adjust the salt and pepper to taste.
Cook for approximately 3 more minutes.
Finally, serve the preparation hot.
