Pira Caldo Traditional
Ingredients
400g of surubi
3 cloves of garlic, crushed
1 large onion, finely chopped
1 red bell pepper, chopped
2 tomatoes, peeled and chopped
Salt and pepper to taste
2 tablespoons of oil
600 ml of water
50 ml of cream
120g of Paraguayan cheese, crumbled
Chopped fresh oregano, to taste
Chopped fresh cilantro (kuratu), to taste
Preparation
Step 1 : In a large pot, heat the oil and brown the pieces of surubi on all sides.
Step 2 : Remove the fish from the pot and set aside.
Step 3 : In the same pot, add the garlic, onion, bell pepper, and tomatoes.
Step 4 : Sauté over medium heat until the vegetables are tender, about 10 minutes.
Step 5 : Add salt and pepper to taste.
Step 6 : Then, add the water to the pot with the vegetables and bring to a boil, allowing the broth to simmer gently for a few minutes.
Step 7 : Once done, place the previously browned surubi into the broth and cook for 10 minutes over low heat.
Step 8 : Add the crumbled Paraguayan cheese and cream, cooking for another 5 minutes.
Step 9 : Add chopped fresh oregano and cilantro.
Step 10 : Finally, serve hot.
