Soyo is a traditional Paraguayan soup made with ground beef, spices, and vegetables that enhance its exquisite flavor. Its preparation involves passing the meat through a mortar, sautéing onions, garlic, bell peppers, tomatoes, and carrots, then adding rice and seasonings. A comforting dish full of tradition.
The preparation of Soyo begins with the meat pounded in a mortar, mixed with cold water, and set aside in a bowl.
In a pot, sauté onions, garlic, and bell peppers, followed by tomatoes and carrots.
Then add the meat, rice, parsley, bay leaf, oregano, cumin, salt, and pepper, cooking for 15 minutes until reaching a semi-liquid consistency.
Finally, garnish with chopped scallions and serve with Paraguayan tortillas or Chipa Guazu.

400 grams of Ground beef
2 Medium onions
3 Tomatoes
1 Green bell pepper
1 Chopped carrot
2 Garlic cloves
1 Bay leaf
1 Sprig of parsley
1 Scallions
1 tablespoon of Fresh oregano
2 tablespoons of Oil
1 pinch of Salt
Water
1 pinch of Pepper
Preparation
Step 1 : First, begin by pounding the meat in a mortar until reaching a paste-like consistency.
Step 2 : Then, place the meat in a bowl and add cold water, stirring well before setting aside.
Step 3 : In a pot, add a little oil and sauté the chopped onions, garlic, and bell peppers.
Step 4 : Next, incorporate the tomatoes and carrots, mixing everything evenly.
Step 5 : Then, add the soaked meat, rice, parsley, bay leaf, oregano, cumin, salt, and pepper.
Step 6 : If necessary, add a little more water to maintain a semi-liquid consistency.
Step 7 : Cook the mixture without stopping to stir for about 15 minutes.
Step 8 : Once ready, remove from heat and serve garnished with chopped scallions.
Step 9 : This delicious recipe can be paired with Paraguayan tortillas or Chipa Guazu.
