Ingredients

8 Scalded and peeled tomatoes

3 Onions

2 Garlic cloves

1 Potatoes

1 Carrots

Basil leaves

Bay leaves

Thyme

1 tablespoon of Sugar

½ cup of Cream

50 grams of Sardo cheese

2 tablespoons of Olive oil

Croutons

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot, place the potatoes, carrots, and one onion to boil for 15 minutes until the vegetables soften.

Step 2 : In a skillet with a little olive oil, sauté the finely chopped garlic and onions until transparent.

Step 3 : Then add the tomatoes, salt, sugar, and a bundle of basil, thyme, and bay leaves.

Step 4 : Stir everything and cook for about 5 minutes.

Step 5 : Next, incorporate the sautéed vegetables into the vegetable broth.

Step 6 : Mix everything and let it cook for 10 minutes.

Step 7 : Afterward, remove the herb bundle and blend the soup.

Step 8 : Return the mixture to the pot and add the cream.

Step 9 : Check the seasoning and cook for another 5 minutes.
